May 29, 1944 – Feb. 21, 2024

Our beautiful mom and wife, Connie Kay Gibson, gently passed from this life on Feb. 21, 2024, with her loving family at her side. She was born May 29, 1944, in Salt Lake City, Utah to Norma Vincent and Harold Meibos and was a little sister to Jeanne. She grew up in Salt Lake City and attended West High School.

Connie met the love of her life on a double date. A beach day at Saltair was all it took to melt David’s heart. David and Connie were married on April 16, 1966, and their love endured for 57 years. Together, they raised three children: Crystal, Jodi and David. They also helped to raise all of their grandchildren at one time or another.

Home and family were everything to Mom. A top-notch homemaker, gardener, baker, canner, nurse and seamstress, she managed our mini farm with ease. She made the best jams, breads, cookies and salsas. Her handmade flannel jammies and baby blankets were always a hit.

Once the kids got older, Connie went to work — first as a seamstress and then manufacturing medical supplies for Ballard Medical. She loved her time there and the friendships she made.

After retiring, Dave and Connie built their dream home in Ivins, Utah — big enough to entertain all the kids and grandkids. When the time came, they moved her mother in with them and helped her live with dignity through the end of her days.

Connie is survived by her loving husband, David; children: Crystal, Jodi (Eugene) and David; sister, Jeanne Peterson; and Izzy the dog. She leaves behind seven grandchildren, eleven great-grandchildren, and many nieces, nephews and cousins.

She is preceded in death by her parents and grandson, Casey.

We invite you to help us celebrate her life and share memories on Saturday, March 9, at 10 a.m. at Metcalf Mortuary, 288 West St. George Blvd., St. George, Utah.

The family would like to thank IHC Hospice and Liz for their dignified care.
